Feeling Foodie: Shrimp & Mushroom Fettuccine

Spell Saab once again brings you another FEELING FOODIE entry. This time it’s something healthy! Shrimp and Mushroom Fettuccine.

We totally just winged it and tried to make our own recipe so here’s a vague recollection of the recipe.

2 servings Fettuccine pasta
1/2 bundle of asparagus (chopped 1 inch)
1 Red bell pepper (chopped)
2 cloves garlic (chopped)
250 grams shrimp (peeled and deveined)
1 small can of mushrooms (sliced)
2 tbsps Olive oil
1/4 cup dry white wine
Salt (to taste)
Pepper (to taste)

I use this handy Healthy Steps tool I got from Make Room to measure a healthy amount of pasta. 1 serving is whatever fits in that tiny hole on the handle.

Boil 2 servings of pasta. Subtract 3 minutes from whatever the suggested cooking time is on the package. We boiled ours for 5 minutes before adding the chopped asparagus. Cook until pasta is al dente.

Drain and save 1/4 cup of the stock (the water used to cook it in). Set aside.

On a separate can, cook the bell pepper for about 2 minutes or until medyo nasusunog na siya. Char. Wala kasi akong griller so improv is key.

Mix it with the pasta and asparagus na kinebs mo kanina

You may use the same pan to heat the olive oil. How long? Pag mainit na. Add the shrimp, cook until pink. Add white wine and let it simmer for about 3 minutes or until the wine has been reduced (taray!).

Add garlic and mix until it smells like cooked garlic. Add drained mushrooms and cook until you think it’s cooked :D

Mix it all and season with salt and pepper to taste. Mix it with the pasta kasi namimiss ka na niya. Add your tinabing stock. Mix it all together and you can season it again with salt and pepper! Chop up an apple and put it on the side. Voila, a healthy dinner is served!

    Try fetuccine with pesto sauce, too. Super easy to make. Just put all the ingredients in a blender: fresh basil leaves, garlic, olive oil, pine nuts, and parmesan cheese. Then mix with the fettucine. I also like to put spanish sardines after I’ve mixed the pesto and pasta. :) Healthy and best of all no need to really cook anything! Except for the pasta, of course.

    Avocado slices
    Tomato
    Cheese
    Mayo
    Tofu marinated for a few hours in soy sauce,
    Olive oil and wine (optional)
    Cilantro (instead of lettuce)

    Put everything in between two slices of bread
    Grill both sides on hot pan with butter or olive oil

    you may opt to use tuna next time instead of shrimp! the corned tuna variety! full of flavor and you may opt to saute the tuna first with tons of garlic! =)
    tapos if you want extra flavor buy a chunk of reggiano cheese and grate some super sarap! =)

    if you want naman sandwich, try to soft boil 2 eggs (mga 2-3mins tops) then take off the shell, mash with a fork with 2 teaspoons of jap mayo and add to wheat bread with salt and tomatoes! =)

      I recommend something like my Sony NEX 5N. Not as bulky as a DSLR but it takes great shots. It’s what I’ve been using :) Color grading is not necessary but if you can afford it, get Adobe Lightroom and watch tutorials online :) Good luck!
